Part-fermented with wild yeasts, this cider is beautifully dry, with a lively freshness, a pleasing tannic bite and the depth and complexity that comes from carefully selected apples and a patient, hands-on approach to cidermaking.

Bottle-conditioned traditionally to develop a fine, gentle, natural sparkle, Wild Cat is a proper cider with a little untamed spirit.
